Every kitchen with gas stove or other cooking appliances causing combustion and smoke should have an appropriate ventilation mechanism.
It is the dream of well-meaning companies like WCT (S) SYSTEMS Singapore that every home and establishments in Singapore has a good kitchen exhaust system which is more appropriately called kitchen ventilation system.
Efficiency-complementing devices
In large/commercial kitchens, such exhaust or extractor hoods should have fire suppression devices. This way, grease fire fumes are properly vented. Some have fresh air fans that infuse toward inside, air from the outside of the building. Hence, such would be circulated with the cooking fumes and then drawn out.
All exhaust systems should have an extractor hood with top of the line filtration systems that remove grease and other hazardous substances. Some vent hoods expel air toward outside but there are some which have recirculating mechanisms using filters to expel grease and odors as well.
The recirculation method and process cleans the air and reverts it into the kitchen. Such method is used if there is no way to push the air outside through a chimney system from the kitchen canopy.
Thus, it is must for every person or entity owning or operating a food establishment to understand kitchen ventilation systems to fully appreciate the importance of their functions. In building a home or a commercial establishment offering food services (i.e. –catering services, restaurants) kitchen ventilations merit special attention or focus.
